Ok, but how can I rotate a character 360 to face the opposite direction without their neck and back breaking in an awkward way? If I wanted to animate a carthweel flip it would just look jank trying to grab all the points and rotate them.

Rotate the pelvis while the other nodes are parented to the pelvis (default). Also increase spine stiffness slider.
I have the latest build since 2024-11-09 and I cant find the interactions that were shown in this video.

How do I make sure the other nodes are parented to the pelvis?
Where is this feature in the menu and or hotkey?

You want to use the "Set node parent" or "A" key to set the parent of a node. Hands and feet are parented to pelvis by default.
